Common Ingredients for Indian Keto Desserts
Artificial sweeteners are required to make keto desserts as these do not raise insulin levels in the body. You can use any brand of sweetener you like. Increase or decrease the quantity of the sweetener to adjust the taste to suit your taste buds.
We have adapted and simplified the chosen recipes in such a way that you will not have any difficulties with the ingredients or preparation methods. All the ingredients mentioned are easy available in Indian towns or you can order them online.
Ingredients like almond flour, almond butter, coconut flour, desiccated coconut and coconut cream can easily be made at home from fresh ingredients. Use any nuts you desire like cashew or almonds instead of ones like pecans or macadamia nuts, which are not so easy to find in local towns.
To make almond butter, soak some almonds in water overnight, peel off the skin and the blend them on high speed till it becomes a smooth paste. Do not add any water. Oil will ooze out of the almonds to create that buttery consistency.
Almond flour is also extremely easy to make at home. The quickest way for instant almond flour is to simply powder them fine after lightly roasting them. But if you want to make almond flour in bulk for storing long term, there is a proper procedure to be followed.
This is an incredibly fudgy dish that can fulfil all your chocolate cravings. The edges come out really crispy while the centre remains soft and chewy. It is usually made in a cast iron skillet, but you can use a normal baking pan for it. If you don’t have protein powder, don’t worry, just add that much more of almond flour instead.
You can bake this in a 6 or 6.5 inch baking pan instead of the cast iron skillet.
Both butter and almond butter are melted together in a pan over medium heat and then the sweetener, vanilla and salt are mixed in. Baking powder, cocoa and almond flour added off the fire, after cooling this mixture a little. Mix in the protein powder and the egg till well combined. Chocolate and the nuts are folded in slowly. Bake at 180 degree Centigrade. For 25-30 minutes, till the centre is set.
The lemon zest is an important ingredient if you want that real lemony flavour. Add more or less of it depending on the how strong you want the lemon flavor to be. The crust is prepared with a cup of almond flour mixed with quarter cup of coconut flour.
The filling is made with almond milk, eggs and lemon juice. Butter, sweetener and the milk are cooked together on medium heat before adding the lemon juice. The eggs are slowly whisked in while the mixture is continuously stirred over low heat. This mixture is poured on top of the prepared crust.
To create the topping. toasted coconut, almond flour, and butter are pulsed together in a blender to create a grainy mixture. This is sprinkled on top of the lemon squares and then it is baked for another five minutes.
A great Keto dessert is the Keto chocolate roll which is also extremely easy to make. The ingredients are simply pulsed together till they form a smooth dough. There is no need to add water as oil gets extracted from the nuts as well as the coconut to create the desired consistency. But it’s best not to blend for too long as then the crunch gets lost.
Instead of pecans, you can use cashews or almonds. Use a 60 grams of a good brand of dark chocolate and add up to 2 teaspoons of vanilla essence for an enhanced flavor. Try using freshly grated coconut instead of desiccated coconut.
Butter and chocolate chips are melted together in the microwave till melted. Cocoa powder and instant coffee powder are added to this mix while it is still warm. Coconut flour and almond flour are folded in along with egg, vanilla, and the sweetener. Now add in the sour cream and mix till well blended.
This enough for two coffee cups. They have to be microwaved separately for 45 seconds or up to one minute to create the consistency or texture you desire. Enjoy them while they are still warm.
You can substitute the sour cream with yogurt. You can use a regular ceramic coffee mug or ramekins to make this. You can top your chocolate cake with whipped cream, if you don’t mind the additional calories.
For this Keto Dessert, the crust is created using pecans and slivered almonds. You can use walnuts along with cashewnuts if you want a different taste. Melted butter and cinnamon are mixed with powdered nuts to make a dough which is divided into 12 portions. Each portion is pressed into mini muffin tins to form the base. These are then kept in the freezer to set hard.
Coconut cream can be made by blending a cup of grated coconut with a teaspoon of coconut oil till you get a creamy paste. Another method is to add some water and make thick coconut milk. Strain this mixture and refrigerate the coconut milk. After a couple of hours you will be able to skim the solidified coconut cream from the top.
Whipped coconut cream is mixed with melted chocolate to make a silky chocolate mousse. The mixture is chilled to thicken it and then spooned into the muffin tine, over the set crust.
The mini muffins are garnished with lemon zest and grated coconut. This has to be kept in the freezer for at least an hour to solidify. Once the fat bombs are ready, they can be stored in the refrigerator, so you can enjoy them anytime you wish.
